Gulbete Salat med Valmuefrødressing

 

Det har nettopp vært påske - og det ble ikke lammelår her i år men det ble gule beter... Om ikke de er en typisk påske ingrediens så har de rette fargen ihvertfall. Om jeg hadde fått velge mellom lammelår og gule beter hadde nok valget landet på lammelår (om det kom fra et lykkelig lam) må jeg innrømme, men dette ble definitivt en god lunsj idag. Og når jeg attpåtil kunne nyte den ute på terrassen så kan det knapt bli bedre.

 

Gule beter får man ikke tak i overalt men de har begynt å ta de inn på enkelte Meny butikker. Jeg har desverre ikke fått tak i økologiske ennå men håper det vil komme etterhvert.

 

Om du ikke finner gule beter kan du fint bruke røde også.

 

 

 

Her er de klare til å settes i ovnen. Bland med litt olivenolje, salt og pepper og bak i ca 20-25 minutter.

 

 

 

 

De grønne Du Puy linsene er litt mindre enn vanlige grønne linser og de passer veldig godt til salater etc for de koker ikke så lett sammen som vanlige grønne linser. Men, vanlige grønne linser er også mulig å koke uten at det blir mos, det kreves bare at man følger godt med og stopper kokingen når de er al dente. De er også enklere å få tak i vanligvis enn Du Puy linsene, men jeg ser nå at de aller fleste helsekoster har dem og de mer velassorterte matvarebutikkene også.

 

Jeg har brukt rosiner i denne oppskriften men du kan også bruke aprikoser eller tørkede tranebær. Bruker du aprikoser så skjær dem i mindre biter først. Og har du ikke spirer så dropper du det og bruker heller mer grønn salat.

 

Her er salaten snart klar, nå gjenstår det bare dressingen og fetaosten. Enkelt og supergodt!

 

 

 

 

Gulbete Salat med Valmuefrødressing

 

500 gr gule beter
1,5 dl Du Puy linser eller grønne linser
100 gr fetaost, laget av sau eller geitemelk
1 håndfull spirer
1 håndfull grønne salatblader
olivenolje
salt & pepper
1 liten neve rosiner

 

Valmuefrødressing

 

2 ss kaldpresset, god olivenolje
1,5 ts dijon sennep
1,5 ts honning
juice av 1/3-1/2 sitron
1 ss valmuefrø
litt salt

 

Instruksjon:

 

*Sett stekeovnen på 200 grader. Skrell og kutt betene i 1-2 cm store sirkler. Bland med olivenolje, salt og pepper og bak i ovnen i 20-25 minutter.

 

*Skyll linsene i kaldt vann og ha i en liten panne, dekk godt med vann og kok til de er møre. Ca 15-20 min. Ta av platen og sil av vannet.

*Imens gjør du klar resten av salaten. Bland alle dressing ingrediensene i en skål, visp med en gaffel og sett tilside. Evt ha i et glass med lokk og rist.

 

*Skyll salaten og spirene i kaldt vann. Bruk en salatslynge til å ta bort vannet fra salaten og spirene. Evt rist godt av vannet mens de ligger i silen.

 

*Bland sammen salat, spirer, fetaost og linser i en stor bolle. Når betene er ferdig blander du de inn i salaten. Ha over dressing og bland godt - og server

PS! Denne salaten kan fint taes med på tur, den holder seg fint noen timer i en boks. Spesielt om du venter med å blande i dressingen og har den i en boks for seg ;)
